KM12.4 - Global Cuisines USE
The spice trade between the East and West has changed the world significantly. It has been responsible for the spread of religions, for starting wars; it changed belief systems and resulted in an age of discovery. Most importantly it changed what and how people ate.
To understand the complexity of different culture’s dining rituals and flavour preferences we need to look at the world as a whole and understand the impact of history, geography, religion and tradition on the cuisines of different nations.
This module will follow the spice route and discuss the food cultures of Asia, the Middle East, Europe and the America's.
