Mod 9 – Numeracy, Weighing & Scaling

Although we cook with a lot of creativity and heart, the chefs world is in fact filled with numbers.  Ranging from basic recipe yields to food cost percentages.  

It is therefore important to grasp the mathematical language that is used daily.  Proper application of math in the kitchen is crucial as it will impact on the success and consistency of a recipe.  Incorrect measurements can lead to excessive wastage that will impact on the establishment's food cost.  Poor measurements will also result in inconsistent dishes, that might leave customers disappointed if their favourite dish has changed.
